I LOVE CANDY!!! Especially the quintessential combination of salty sweet peanut butter and chocolate! In this recipe, I have melted chocolate and layered it with my Peanut Butter Candy recipe. I used a sweet little ice cube tray with a rounded shape to create my peanut butter and chocolate stacks. I make these candies around Christmas time and give them as gifts, along with my cookies. It’s always nice to include a little something unexpected, a little variety, inside the cookie tin. This is pure joy!

Peanut Butter Candy


• 3/4 cup  creamy peanut butter
• 4 Tablespoons unsalted butter, softened to room temperature
• 3/4 cup confectioners’ sugar
• 1/2 teaspoon Kosher salt + more for garnish
• 1 teaspoon vanilla extract
• 2 Tablespoons half-and-half

Your favorite brand of chocolate chips, melted


Beat butter and Peanut butter on medium speed until creamy and completely smooth – about 1-2 minutes. Add the confectioners sugar salt and vanilla. Mix on medium speed until combined. Add the half and half and mix on high until creamy, at least 1 minute. Use to make candies.

Using an Ice Cube tray with an attractive shape, layer one tablespoon of chocolate with one rounded teaspoon of the peanut butter candy, and one more tablespoon of melted chocolate over the peanut butter candy. Fill all Ice Cube containers in this way, and sprinkle each stack of melted chocolate and peanut butter with a pinch of kosher salt. Place all ice cube trays in the refrigerator to harden. Once they are solid pop them out of the containers and serve. Keep these candies stored in a cool place until they are consumed.

This recipe fills approximately four small sized ice cube trays.
